"Shakshuka" Poached Eggs

Shakshuka the mix it all up in a pan and poach eggs in it. A favorite, easy to make peasants dish.

Ingredients:     2 TBSP Olive oil
                            1 medium Onion cut up small            
                            3 crushed Garlic cloves
                            1 Sweet Red Pepper cut up small
                            4 large Tomatoes
                            1 TBSP Tomato Paste
                            ½ tsp Salt
                            ½ tsp Paprika
                            ¼ Cup fresh chopped celery
                            Freshly ground black pepper at the end
                            4 Eggs


Preparation:    Sprinkle some salt to a deep Pan and heat up on high heat for ½ a min. Add the olive oil. Add and sauté the cut up onion until it is soft, add to the pan the cutup pepper and crushed garlic until the pepper is soft. Cut up the tomato to parts each and add to the pan. When the tomato starts to soften, add the salt, tomato paste and paprika. Lower the heat. When all tomatoes are soft and watery add the celery and crush some black pepper. Make 4 indents in the sauce and break an egg into each of the indents. Cover the pan and keep cooking for about 5 minutes or until the eggs are poached to your liking. Sprinkle some more salt and pepper to your liking and serve in the pan or dish out to 4 plates. Shakshuka is eaten with bread by dipping, scooping and eating.
